Last Saturday I made these coconut delights to take to my friend’s house. We had these for dessert and they are just divine. This dessert/snack is Colombian and most popular on the coast. A soft, sweet, delicious cookie like treat that’ll make your co-workers, friends, and family go YUMMY! This recipe is easy and lasts in a tight sealed container at room temperature for a week.
Makes for 20-30 treats (depending on size)
Ingredients:
- 4 Cups Sweetened Flake Coconut (14 oz package)
- 1 (520 mL) Can Coconut Water,passed through a sieve to discard the pulps
- 375 Grams White Sugar
- 1/4 Tsp Ground Cloves
- Juice of 1 Lime
- Raisins, for garnish
Preparation:



In a medium-sized pot add in the coconut flakes, sugar, ground cloves, and lime juice. Stir with a wooden spoon to combine. Cook over medium-high heat stirring from time to time for about 25-30 minutes.
Mixture is ready when the liquid is evaporated, when it gets tan colored, and when it sticks to the sides of the pot. Turn heat off and let cool for 10 minutes.
On parchment paper start forming the balls with a spoon and top each ball with a raisin. Let balls sit for a bit to dry then you can remove and enjoy!
