Chipotle Apricot Cream Cheese Spread

So mother got this recipe off a Mexican friend of hers. Thought this was genius! Super delicious and works great as an appetizer for parties, get togethers, or as a snack. Easy to prepare and only takes 3 minutes and 3 ingredients until you try this smokey, spicy, sweet spread on salty crackers. It’s goooooood.

  • 3 Chipotle Peppers in Adobo Sauce (from the can) plus 2 Tbsp of the Adobo Sauce
  • 2 Tbsp Apricot Preserves
  • 1 Log of Cream Cheese (I used regular but you can substitute for whatever you please….fat-free….)

In a blender or food processor add in the chipotle peppers with the seeds or if you don’t like so much heat you can remove the seeds. Also add in the apricot preserves and start pulsing till you reach a smooth consistency.

Place log of cream cheese in a plate and pour the chipotle apricot mixture over covering the whole thing. Serve with a side of salty crackers.
