Corn and Meat Pie (Pastel de Choclo)


This Ecuadorian dish might look ugly but don’t be fooled. It’s absolutely delicious! Make this for a special occasion or just for dinner. These ingredients are found in any supermarket, so go on and make it =).

Makes for 6 Servings

Ingredients:

  • 1 (29 oz.) Can of Corn, drained and rinsed.
  • 5 Tbsp Unsalted Butter, melted
  • 1/2 Cup Milk (any kind Whole, 2%, or even Fat Free 1%)
  • 1/2 Cup Heavy Cream
  • 5 Eggs, separated
  • 1 Cup White Sugar or Brown Sugar
  • 1 shot glass (1 1/2 oz) of Rum (any kind)
  • Salt & Pepper, to taste

For Filling:

  • 1 Pound Ground Beef
  • 1 Red Onion, chopped
  • 1 Garlic Clove, minced
  • 10 Whole Olives, pitted (I used Kalamata olives, but it’s up to you)
  • 1/2 Cup Raisins
  • 1 Tbsp Parsley or Cilantro, chopped finely
  • 2 Hard Boiled Eggs, sliced
  • 2 Tbsp Canola Oil
  • Salt & Pepper, to taste

Preparation:

In a food processor or blender puree the corn, milk, and heavy cream.

Add in the butter, egg yolks, sugar, rum, salt & pepper and puree until smooth. Then reserve puree in a bowl covered with plastic wrap until ready to use.

In a medium sized saute pan heat the oil and cook the onion and garlic until translucent. Then add in the ground beef and cook until the beef is no longer pink. Turn heat off and add in the parsley or cilantro, raisons, salt & pepper and mix well. Set pan aside to cool until ready to use.

With an electric mixer or whisk. Whisk the egg whites until stiff peak. Then fold egg whites into pureed corn.

Preheat oven to 350 F. (180 C.). In a 9×5 in. Loaf Pan pour in half of the corn puree then on top put all of the beef filling. On top of the beef filling place on the egg slices and olives. Then cover filling with the rest of the corn puree. Put loaf pan on top of  another pan so when it’s cooking it won’t dirty your oven. It drips….

Bake for 50 – 60 minutes. Wait 10-15 minutes before cutting and serving.
